Ingredients:
1 bunch kale (10 large leaves with ribs cut out) 1 or 2 pieces cooked bacon (reserve bacon fat) 1 sweet apple 1/2 cup nuts of your choice (walnuts, toasted almonds) Dressing: 3 tbsp olive oil 3 tbsp apple cider vinegar 2 tbsp honey 1/2 tsp dry mustard Stir well. Wilt kale in 2 tbsp of bacon grease (or oil) in a skillet. As soon as it wilts, move it quickly to a cold water bath to stop the cooking process. Drain kale and pat dry. Add chopped sweet apple, nuts and crumbled bacon. Drizzle with salad dressing. Sprinkle with freshly grated Parmesan cheese if desired. Makes 2 healthy sized servings.
